A member of the Filipinos in Singapore group shared a photo of a pinakbet from Lucky Plaza this week. One small bowl of sitaw, kalabasa, talong, and okra. The price: S$8. The caption ran under an anonymous handle, tagged #JustSharingLangMyExperience:

Nung nasa counter na ko, tinanong ko ang cashier kung magkano, ang sabi niya nung una 6$, then sumagot yung taga-serve, sabi niya 8$ daw. Mismo yung cashier nagulat na 8$ yung price. Well anyway, binayaran ko pa rin kasi na-order ko na at nahiya na akong ibalik.
The post took off fast: 7,300 reach, 187 reactions, and 157 comments in three hours. "Omg," wrote one member. "Galing pa yata Pinas ung talong daw," joked another, saying the eggplant must have flown in from the Philippines to cost this much.
Half the group said "ang mahal naman." The other half said cook at home. Both are right. The price is high, and the stall is not cheating you. The reason is two words: rent and volume. Once you see what the stall pays, and how few plates it sells, the S$8 makes sense.
The vegetables are the cheapest part
Sitaw, kalabasa, talong, okra, a little pork, rice, and the plastic bowl. All together, one plate costs the stall about S$3 to make. That is the part you picture when you see the price. It is the smallest part.
What the stall pays every month
Every month, before it sells one plate, a Lucky Plaza stall pays:
Rent: S$15,000
Staff (4 people, S$3,000 to S$4,000 each): S$12,000 to S$16,000
Utilities (PUB): S$4,000
Dishwashing: S$2,500
Add it up: S$33,500 to S$37,500 a month, before a few licences and permits. The whole S$8 stays with the stall for the bills and the food.

So the stall must sell about 250 plates every day to cover its costs. Sell fewer, and it loses money that day. That is a lot of pinakbet before the owner earns anything.
Why the Chinese stall is cheaper
Same street, same kind of rent, lower price. The reason is how many people buy.
A Chinese rice stall in a coffee shop is busy all day: breakfast, lunch, dinner, every day. A Filipino stall at Lucky Plaza gets busy in short windows, after work and on weekends, when kabayan come to eat. Fewer busy hours mean fewer plates.
Now picture two stalls with the same S$37,500 in bills:
The Filipino stall sells 250 plates a day. Rent and bills per plate: S$5.
The Chinese stall sells 500 plates a day. Rent and bills per plate: S$2.50.
Twice the customers, half the cost per plate. The busy stall can charge less and still earn. The Filipino stall cannot, so the price goes up. Nobody is greedy. One has more people walking in.
Cook it at home for about S$3 a plate
For the price of one S$8 plate, you can cook almost three at home. A pot of pinakbet for four people:
Vegetables and a little pork: about S$10
Rice: about S$1
Gas or electricity: about S$0.50
Water and soap to wash up: about S$0.50
Total: S$12 for four plates, or S$3 each, gas and washing included. That is S$5 cheaper than the stall, and one pot feeds four.
That S$3 counts the gas but leaves out two things. First, the trip to buy the food, a bus or MRT fare each way. Second, your time: close to an hour to cook, then wash the pot and the plates. In dollars, home cooking wins. On a tired rest day, the S$8 plate buys that hour back.
So both things are true. The S$8 is fair for a hot meal, a seat, aircon, and a Sunday that feels like home. And when money is tight, your kaldero wins every time.

Next time a price shocks the group, do the small math first. Rent, wages, bills, then the food. A Lucky Plaza stall needs about 250 plates a day to survive, and it sells them in a few short windows, not all day like the stall next door. Pay the S$8 when you want the comfort. Cook at home when you want to save. Both are smart.
